SAVING ENERGY IN AN OVEN

Arrange racks in an oven before you turn it on. It not only saves heat; it's a whole lot safer.
If a roast or a casserole will ‘cook for more than an hour, start it in a cold oven and cook it for the pre-scribed time- If the time is under an hour, extend it slightly- Reserve preheating for baking.
Cook small quantities of food in a microwave oven rather than in an electric oven. A microwave can use one-third to one-half as much energy as an electric oven. But always use a range oven for large quantities of food.

ADJUSTING YOUR OVEN'S TEMPERATURE CONTROL

To test your oven, place an oven thermometer in its center, set the oven for 350° F, and run it for 20 minutes. To get the most accurate readings, use an oven thermometer with a mercury-filled column. They are stocked by kitchen specialty shops and are great baking aids too.
To adjust the thermostat on many ovens, pull off the temperature control knob and look on its underside. Loosen any screws (or clips) and adjust the disc. A notch usually represents 10 degrees. If you have to move more than two notches, have the thermostat replaced.
For other ovens, pull off the temperature control knob and turn the screw inside the knob's hollow shaft. Turning it clockwise lowers the setting; counterclockwise raises it. If it requires an adjustment of more than 25 degrees, about an eighth of a turn, have the thermostat replaced.

SELF-CLEANING OVEN

A continuous-cleaning (catalytic) oven has special rough-textured porcelain. Spills and splatters spread over the material and gradually burn off as temperature rise the oven. This helps hide the soil while it hums off, but the oven may not always ok as clean as you would like.
A continuous-cleaning oven costs only little more to buy than a regular oven. Because it cleans while you use the oven, it costs nothing more to operate. It consumes extra energy only when heavy baked-on deposits must be burned off at /100° F or more with the oven empty. But you can often eliminate this by always wiping up large spills as soon as the oven cools. Starchy spills especially need to be removed because the system doesn't remove them as well as it does greasy soil. Because scrubbing or applying oven cleaner to it will damage it, many ranges have a standard porcelain finish on the oven floor and door so that such spills can be cleaned in the normal fashion. A self-cleaning (pyrolytic) oven has a special cleaning cycle. Before next use runs a damp cloth to collect the fine gray that remains. On some models you can also put the reflector or burner bowls from the cook top in the oven and clean them too. Surprisingly, an oven that self-cleans doesn't use a lot of energy, because it's heavily insulated. Indeed, a cleaning cycle costs less than the chemical oven cleaner that you'd need for a standard oven. The insulation saves energy during cooking and lets you bake or roast without overheating the kitchen, but it does reduce oven size. You can't use an oven during thyself leaning process.
